BUNDT CAKE DE SIDRA Y CHOCOLATE BLANCO CON GLASEADO DE CHOCOLATE BLANCO

Ya estamos a mitad del mes de febrero y volvemos con nuestro reto de #BundtBakers y sus bundt cakes. Cada día me gustan más estos bizcochos. ¡¡Son tan versátiles, quedan tan bonitos y se hacen tan rápido...!! En este mes la anfitriona ha sido Tanya del blog Desserts Talking y ha elegido un ingrediente fetiche, casi imposible que haya un blog que no tenga recetas de él, incluso hasta los que son más de salado lo incluyen en sus recetas y es que el chocolate es "mágico". O por lo menos, así lo creían las antiguas civilizaciones que lo incluían en sus rituales de matrimonio. Estamos hablando de hace siglos, en la parte de México y Sudamérica. ¿Nos vamos a recorrer un poco de historia?

Si bien el origen del chocolate es incierto, no se sabe si llegó a México desde el Amazonas y el Orinoco, o al contrario, llegó al Amazonas y al Orinoco desde México, lo cierto y verdad es que fue en ese continente donde se encuentran los primeros vestigios del chocolate. Al principio se tomaba una bebida fermentada de la pulpa del cacao, de la que se han encontrado restos en vasijas en Puerto Escondido (sitio arqueológico en Honduras), y luego ya se fueron consumiendo los granos de cacao hechos pasta y aderezados con chile. Era una bebida de la realeza y se consideraba un alimento energizarte y tonificante. Desde América pasó a España, a través de Cristobal Colón y Hernán Cortés, quien lo introdujo en la corte española donde ya empiezó tomarse con azúcar y otras especias como la pimienta y a partir de aquí, se extiendió a toda Europa.

Para realizar nuestro bundt cake hemos elegido el chocolate blanco, que precisamente es el que no tiene pasta de cacao sino manteca de cacao, de ahí su color blanco. Lo que ocurre es que al carecer de la pasta de cacao tampoco tiene sus propiedades energizantes. Aunque está muy bueno, debo decir que es el que menos me gusta porque no tiene ese toque amargo que caracteriza al chocolate. Sin embargo, en nuestro bundt cake ha quedado genial. Ya había publicado un montón de bundt cakes con chocolate: Bundt cake de Chocolate con bastoncitos de menta, Bundt cake de Chocolate y Guinness, Bundt cake de chocolate y patata y me apetecía probar uno de chocolate blanco, pero también quería que llevara fruta.

Había visto uno de cava de Frambuesa y Caramelo que se veía delicioso y entonces pensé que podría hacerlo con sidra, fresas y chocolate blanco. He adaptado un poco la receta para adecuarla a mis ingredientes y mis gustos y ha resultado ¡deliciosa!. Es un bizcocho muy esponjoso y tierno. Con el glaseado de chocolate se hace dulce y aromático y las fresas contrarrestan ese dulzor y le aportan frescura y ligereza. La sidra le da un toque muy particular aunque no es que se aprecie demasiado.

Una vez puestos en situación, vamos allá con nuestra receta, que seguro que estáis deseando saber cómo se hace.

BUNDT CAKE DE SIDRA Y CHOCOLATE BLANCO CON GLASEADO DE CHOCOLATE BLANCO

Ingredientes:

Para el bundt cake:
200 gr. mantequilla sin sal a temperatura ambiente
150 gr. azúcar
30 gr. azúcar demerara (o azúcar moreno)
3 huevos M + 1 yema
210 gr. harina
2 cucharaditas de levadura química
1/4 cucharadita de sal
1 cucharadita de pasta de vainilla Home Chef
120 ml. sidra El Gaitero
50 gr. chips de chocolate blanco

Para el glaseado:
100 gr. chips de chocolate blanco
100 gr. azúcar glas
5 cucharadas de nata líquida (crema)
15 gr. mantequilla

Para la decoración:
10-15 fresas naturales lavadas y secadas
15 gr. pistachos pelados y picados

Preparación:

Del bundt cake:

Precalentamos el horno a 170ºC, calor arriba y abajo, sin ventilador.
Tamizamos la harina, la levadura y la sal.
Mezclamos la pasta de vainilla con la sidra.
En un bol grande, batimos la mantequilla y los azúcares hasta que tengamos una masa cremosa y esponjosa.
Vamos echando los huevos ligeramente batidos de uno en uno. Mezclamos bien y no echamos el siguiente hasta que el anterior no esté bien mezclado.
Echamos la mitad de la harina en la masa y mezclamos bien.
Añadimos la sidra con la vainilla y volvemos a mezclar.
Terminamos con la harina y mezclamos todo bien.
Echamos las chips de chocolate blanco y removemos con una cuchara para que se repartan bien.
Engrasamos un molde de bundt cake con spray antiadherente y echamos la masa. Damos unos golpecitos para que se meta en todos los huecos que tenga el molde.
Horneamos durante unos 50-55 minutos o hasta que esté dorado y pinchemos con un palillo y salga limpio.
Sacamos del horno y dejamos el molde sobre una rejilla. Esperamos unos 10-20 minutos a que se enfríe y se vaya despegando de las paredes del molde. Entonces estará listo para dar la vuelta y terminar de enfriarse en la rejilla. (Si quieres saber los mejores trucos para un bundt perfecto, pincha aquí).

Del glaseado:

En un cazo al baño maría derretimos el chocolate con la mantequilla y la nata.
Cuando esté derretido, quitamos del fuego, le echamos el azúcar las y lo batimos hasta que obtengamos una mezcla homogénea y lisa.
Mojamos las fresas, les ponemos por encima los pistachos picados y dejamos sobre un papel de hornear hasta que se endurezca el chocolate.
Vertemos el resto sobre el bundt cake.

Montaje:

Ponemos las fresas en el hueco del bundt cake y esparcimos el resto de los pistachos que nos hayan sobrado.

Hello, everybody from #BundtBakers and all over the world!! I'm really happy to be baking a new bundt cake this month. February, a lovely month, and the month of chocolate. Our mate, Tanya from Desserts Talking, has chosen an incredible ingredient: chocolate. I think there is no cooking blog which has not a chocolate recipe. It is impossible not to use it because it is delicious.
Did you know the chocolate comes from Mexico, the Amazon and the Orinoco land? From there to Spain, from Spain to the whole Europe and from Europe to the world.
In this bundt cake I have mixed, a Spanish cider with white chocolate and it results a fluffy, light cake with flavor and very tasty. Strawberries give it a touch of freshness opposite to the sweetness of the white chocolate glaze. At the beginning, I was not sure about the combination but now, I know it is perfect. Let me show you the recipe!!

CIDER WHITE CHOCOLATE BUNDT CAKE WITH WHITE CHOCOLATE GLAZE

Ingredients:

For the bundt cake:
200 gr. unsalted butter at room temperature
150 gr. granulated sugar
30 gr. demerara sugar
3 medium eggs + 1 egg yolk
210 gr. all-purpose flour
2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla paste Home Chef
120 ml. cider
50 gr. white chocolate chips

For the glaze:
100 gr. white chocolate chips
100 gr. icing sugar
5 Tablespoon cream
15 gr. butter

For garnishing:
10-15 strawberries washed and dried
15 gr. chopped, peeled pistachios

Directions:

For the bundt cake:

Preheat the oven to 170ºC, up and down heat, no fan.
Sieve the flour, the salt and the baking powder.
Mix the cider and the vanilla paste.
In a big bowl, whisk the butter and the different kinds of sugar until creamy and fluffy.
Add the eggs and the yolk, lightly beaten, one at each time. Mix well after each addition and before adding the next one.
Add half of the flour mixture and mix.
Add the cider and the vanilla paste. Mix well.
Add the rest of the flour mixture and mix well.
Place the white chocolate chips in the batter and stir with the help of a wooden spoon.
Grease a bundt cake mold and pour the batter.
Bake for 50-55 minutes or until golden brown and a stick comes out clean.
Leave the mold in a wire rack for 10-20 minutes until the mold is cool and the cake is separated from the mold. Then, turn the cake upside down.
let cool in the wire rack.

For the glaze:

In a double boiler, melt white chocolate, butter and the cream.
As soon as everything is melted, pour the icing sugar and whisk until it gets homogeneous.
Dip the strawberries in the glaze, put some pistachios and leave them in a baking sheet until hard.
Pour the rest of the glaze over the bundt cake.

Asembling:

Fill in the hole of the bundt cake with the strawberries and sprinkle the rest of the pistachios on it.

KOZUNAK - BULGARIAN EASTER SWEET BREAD

Llegó el mes de febrero también para nuestro reto de #reposterasporeuropa y ¿quién ha sido la anfitriona esta vez? Pues yo misma. Sí, me tocó ser la anfitriona y decidir a dónde nos íbamos en busca de dulcerío del bueno. La verdad es que al principio no tenía ni idea de dónde establecer nuestra pastelería de ricos bollos y galletas, lo que sí tenía claro es que quería que fuese algún lugar no muy conocido por la gente, y que nos supusiera un reto en todos los sentidos. Entonces, me decidí por Bulgaria.

Limitando por un lado con el Mar Negro y por el otro con los Balcanes, Bulgaria es uno de los países situados más al este de Europa. Su cercanía con Grecia, Turquía y el mundo árabe hacen que su cocina esté fuertemente influenciada por la de esos países. Hoy os traigo aquí un pan dulce que se hace en Bulgaria durante la Pascua. Se llama Kozunak, en búlgaro, y el que os traigo hoy está hecho con yogurt. Buscando recetas en Pinterest, ya sabéis que es mi fuente de inspiración favorita, encontré un blog búlgaro que me ha encantado. Es el de Eva Toneva y tiene unas recetas deliciosas, tanto búlgaras como de otros países. De allí he sacado mi Kozunak, a base de experimentar porque el traductor de búlgaro de Google es nada más que "regular" y la he adaptado un poco a los ingredientes de los que disponía. El resultado: ¡¡¡Espectacular!!!

KOZUNAK DE YOGURT

Ingredientes:

Para la masa:
650 gr. de harina tamizada + 50 gr. para enharinar los arándanos rojos (o pasas)
50 gr. de arándanos rojos
25 gr. de levadura fresca de panadería
1/2 cucharadita de sal
150 gr. de azúcar glass
1 cucharadita de ralladura de limón
1 cucharadita de extracto de vainilla
2-3 cucharadas de Pedro Ximénez (o ron)
30 gr. de mantequilla
30 gr. de manteca de cerdo
3 huevos M y una clara
200 gr. yogurt (o sour cream, crema agria)
150 ml. leche caliente

Para barnizar y decorar:
1 yema de huevo
2 cucharadas de leche
2 cucharadas de almendras laminadas
2 cucharadas de azúcar normal

Preparación:

De la masa:

Ponemos los arándanos en un vasito con el vino y lo dejamos macerar una hora.
Tamizamos la harina, la sal y el azúcar en un bol grande.
Calentamos la leche y disolvemos la levadura en ella.
En un plato, batimos un poco los huevos junto con la ralladura de limón y el extracto de vainilla.
Hacemos un agujero en el centro de la harina y echamos el yogurt, la mezcla de huevos y la leche con la levadura.
Vamos disolviendo la harina en los líquidos mezclando poco a poco.
Amasaremos con las manos hasta que estén todos los ingredientes bien mezclados y tengamos una masa consistente.
Sacamos del bol y ponemos sobre una superficie ligeramente enharinada. Amasamos durante unos 5-10 minutos. La colocamos en un bol enharinado y tapamos con un paño de cocina. Lo ponemos en un lugar cálido y la dejamos reposar unos 30-45 minutos.
Derretimos la mantequilla y la manteca de cerdo y dejamos que se enfríe a temperatura ambiente mientras reposa la masa.
Sacamos la masa del cuenco y cogemos un trozo, la volvemos a poner en el cuenco y le echamos una cucharada de mantequilla derretida. Amasamos hasta que la mantequilla se haya absorbido por completo. Repetimos hasta que acabemos con toda la mantequilla.
Volvemos a amasar, formamos una bola y ponemos en un bol con un paño tapado. Lo dejamos que doble su volumen, entre 2-3 horas, depende del frío que haga.
Escurrimos los arándanos y los enharinamos.
Dividimos la masa en 10 bolas del mismo tamaño. Añadimos unos cuantos arándanos a cada bola y las amasamos bien voleándolas un poco.
Las ponemos en un molde en forma de corona un poco engrasado. (Yo para el molde he utilizado 7 bolas, como dice la receta, y he hecho 3 en porciones aparte).
Cubrimos con un paño y volvemos a dejar que leven unos 30-40 minutos.
Mientras, encendemos el horno a 180ºC.

Del barniz:

Mezclamos la leche con la yema de huevo y barnizamos las bolas.
Espolvoreamos las almendras y el azúcar por encima.
Metemos en el horno durante unos 30-40 minutos.

Consejo: Este pan es mejor comerlo el mismo día que se hace. Tiene una masa consistente y se pone duro pronto. Podemos envolverlo en film y comerlo al día siguiente y también podemos congelarlo. Al día siguiente podemos tostarlo y nos sabrá igual que el primer día. Buenísimo.

YOGHURT KOZUNAK

Ingredients:

For the dough:
650 gr. sifted flour + 50 gr. for coating the cranberries (or raisins)
50 gr. cranberries
25 gr. yeast
1/2 teaspoon salt
150 gr. icing sugar
1 teaspoon lemon zest
1 teaspoon vanilla extract
2-3 Tablespoon Pedo Ximenez (or rhum)
30 gr. unsalted butter
30 gr. lard
3 medium eggs + 1 egg white
200 gr. yoghurt (or sour cream)
150 ml. warm milk

For glazing:
1 egg yolk
2 Tablespoon milk
2 Tablespoon flaked almonds
2 Tablespoon granulated sugar

Directions:

For the dough:

Soak the cranberries in the wine Pedro Ximénez for one hour at least.
Sieve the flour, the salt and the icing sugar in a big bowl.
Dissolve the yeast in the warm milk, stirring constantly.
In a medium bowl, whisk the eggs and the white and mix them with the lemon zest and the vanilla extract.
Make a hollow in the flour and add the yoghurt, the egg mixture and the warm milk with the yeast.
Stir slowly until everything is well-mixed.
Place the dough in a floured board and knead for 5-10 minutes.
Place the dough in a floured bowl, cover with a cloth and set aside in a warm place for 30-45 minutes.
Meanwhile, melt the butter and the lard and let cool.
Take one piece of dough and mix with a spoon of the melted mixture. Knead until the butter is well incorporated. Repeat until the butter mixture is finished.
Shape the dough into a ball and place in a floured bowl. Cover with a cloth and let it double its volume (2-3 hours).
Rinse the cranberries and coat with flour.
Make 10 parts out of the dough. We will place seven in a crown mold and the rest in separated molds.
Roll out each ball and place some cranberries inside. Shape them into small balls.
Place in the molds, previously greased. Cover with a cloth and let them double their size for 30-40 minutes.
Meanwhile, heat the oven to 180ºC.
