BUNDT CAKE DE CHOCOLATE NEGRO CON BASTONCITOS DE MENTA - #BUNDTBAKERS

Un mes más estamos aquí con nuestro reto de #bundtbakers. Este mes nuestra amiga Laura del blog The Spiced Life nos ha propuesto hacer un bundt cake en el que la menta forme parte de él. Creo, que si alguna vez me hubiesen pedido que eligiera un ingrediente nunca hubiese dicho "la menta". No sé por qué, pero no me atraía en absoluto hacer algo con menta, y menos un bizcocho. Sin embargo, una de las cosas que más me gusta de cocinar es probar nuevas mezclas y hacer experimentos, por ello, el hacer este bundt, aparte de ser un reto en sí, ha significado ser un reto de sabor, porque no tenía ni idea de cómo iba a quedar.
Lo que sí tenía claro era que iba a utilizar "candy cane", los bastoncitos de caramelo que saben a menta y que estuve buscando como loca por aquí pero que no encontré. Entonces, aprovechando mi viaje a Lima, me puse a buscarlos en las tiendas y supermercados limeños. Sabía que allí los encontraría y así fue. Además de menta, tenían chocolate, vamos, deliciosos. La menta en los caramelos me gusta, pero en un bizcocho... Tenía que experimentar.
Segundo estreno de mi molde nuevo de bundt cake modelo Heritage. Os he dicho ya que me encanta. Pues sí. Lo adoro. Para la receta me basé en una de mi libro El Rincón de Bea y me pasé al lado oscuro porque... ¡mira que está bueno el chocolate negro...! A lo mejor soy un poco repetida pero, es que me gusta mucho el chocolate. Chicos, mientras escribo esto tengo un trancazo encima que se me caen hasta los ojos. Me he resfriado pero bien. A esa receta tan inmejorable le añadí trocitos de bastoncitos de menta y el resultado fue genial. Un sabor a chocolate espectacular y un frescor a menta increíble, muy sutil pero perceptible. Os invito a que lo probéis, no os defraudará.
BUNDT CAKE DE CHOCOLATE NEGRO CON BASTONCITOS DE MENTA
Ingredientes:
Para el bundt cake:
250 gr. de mantequilla a temperatura ambiente
425 gr. de azúcar
5 huevos M
350 gr. de harina normal
1 cucharada de bicarbonato sódico
1/4 cucharadita de sal
250 ml. de buttermilk (receta casera)
60 gr. de cacao puro en polvo Valor
150 ml. de agua hirviendo
2 cucharaditas de extracto de vainilla
50 gr. de bastoncitos de menta Hershey's
Para el ganache de chocolate:
(Adaptada de la receta de Parsley, Sage, Sweet)
170 gr. chocolate negro Nestlé Postres
1/3 taza + 2 cucharadas de nata para montar
15 gr. de mantequilla
1 cucharada de sirope de maíz

4-5 bastoncitos de menta

Preparación:
Del bundt cake:
- En un cazo, calentamos el agua. Cuando rompa a hervir, le añadimos el cacao y batimos hasta que obtengamos una mezcla lisa y homogénea. Quedará como una pasta de cacao. (No la probéis que está muy amarga, jeje). Dejamos que se enfríe mientras preparamos los otros ingredientes..
- Precalentamos el horno a 170ºC.
- En un bol, tamizamos la harina, el bicarbonato y la sal y reservamos.
- En un bol grande, mezclamos la mantequilla con el azúcar y lo batimos todo hasta que la mezcla sea blanquecina y esponjosa.
- Añadimos uno a uno los huevos, ligeramente batidos, batiendo a velocidad baja. No echar el siguiente hasta que no esté totalmente integrado el anterior.
- Añadimos ahora un tercio de la harina y mezclamos a velocidad baja. Luego echamos la mitad de la buttemilk. Repetimos, alternando los ingredientes hasta terminar con la harina.
- Incorporamos el extracto de vainilla y la pasta de cacao que teníamos enfriando.
- Mezclar bien hasta que toda la masa quede con el mismo color.
- Añadimos los bastoncitos de menta que habremos machacado previamente para que queden trozos pequeños. (Yo los metí en una bolsa con cierre y los golpeé con un rodillo). Mezclar a mano con ayuda de una espátula.
- Engrasamos un molde bundt cake con spray desmoldante.
- Volcamos la mezcla en el molde, asegurándonos de que llena todos los huecos. Damos unos golpecitos sobre la encimera para liberar las burbujas de aire y alisamos la superficie.
- Horneamos entre 55-60 minutos o hasta que lo pinchemos y el palillo salga limpio.
- Sacamos del horno, dejamos el molde sobre una rejilla entre 10-20 minutos (depende de nuestra temperatura). (Yo normalmente lo dejo hasta que el bizcocho se ha separado bien de los bordes del molde).
- Desmoldamos y dejamos enfriar boca abajo sobre la rejilla.
- Mientras se enfría, preparamos el ganache.
Del ganache:
- En un bol, echamos el chocolate partido en trocitos pequeños.
- En un cazo, calentamos el resto de los ingredientes hasta que empiece a hervir.
- Quitamos del fuego y lo movemos para que se enfríe un poco y no queme el chocolate. Echamos sobre el chocolate.
- Dejamos 5 minutos sin mover, ni remover.
- Pasado este tiempo, cogemos el bol y lo movemos con movimientos circulares para que se vayan mezclando todos los ingredientes poco a poco hasta que esté todo bien mezclado.
- Si no se nos derriten todos los trozos, podemos darle un golpe de calor al baño maría.
- Si vemos que se nos ha espesado demasiado, le podemos echar un poquito de agua, cucharada a cucharada hasta que tengamos la consistencia que necesitemos.

Montaje:
- Una vez que el bundt cake está frío, le echamos por encima el ganache y otros bastoncitos de menta picaditos.
- ¡A disfrutar!

CANDY CANE DARK CHOCOLATE BUNDT CAKE
Hello, everybody! This month in #Bundtbakers we have "mint" as the main ingredient for our baking challenge. Our host is Laura from The Spiced Life and, although it could seem odd, it is the first time I try a mint cake. But, here it is my recipe. Deliciously chocolatey bundt cake!!!
Ingredients:
For the cake:
250 gr. unsalted butter at room temperature
425 gr. granulated sugar
5 medium eggs
350 gr. all-purpose flour
1 Tablespoon baking soda
1/4 teaspoon salt
250 ml. buttermilk
60 gr. cocoa powder
150 ml. boiling water
2 teaspoon vanilla extract
50 gr. candy canes
For the ganache:
170 gr. dark chocolate
1/3 cup + 2 Tablespoon whipping cream
15 gr. unsalted butter
1 Tablespoon corn syrop
For garnishing:
4-5 candy canes
Directions:
For the cake:
- In a saucepan, birng water to boil. Add cocoa and mix until you get a smooth and homogeneous pâte. Let aside.
- Preheat the oven to 170ºC.
- In a medium bowl, sieve the flour, the baking soda and the salt. Reserve.
- In a big bowl, mix together butter and sugar until lightened and fluffy.
- Add the eggs, previously slightly beaten, one at a time and beat at low speed. Do not mix the next one until the previous one is totally mixed.
- Add 1/3 of the flour, mix and add the half of the buttermilk. Repeat until the flour is finished.
- Add the vanilla extract and the cocoa pâte.
- Mix well until all the ingredients are well incorporated.
- Add the candy cane previously crushed with a rolling pin. Mix by hand with the help of a spatula.
- Grease a bundt cake mold. You can use non-stick spray or oil.
- Pour the dough into the mold and be sure all the holes are well filled. Flatten the top of the dough.
- Bake for 55-60 minutes or until a toothpick poked into the middle comes out clean.
- Remove from the oven and allow to cool in the bundt mold for 10-20 minutes or until the cake is separated from the sides of the mold.
- Turn it out and set to cool on a wire rack.
For the ganache:
- Cut the chocolate into small chunks and place them into a bowl.
- In a saucepan, heat the rest of hte ingredients until boiling.
- Remove from fire and swirl so that it get cooler. Pour into the bowl with the chocolate chunks.
- Let cool for 5 minutes without moving.
- Take the bowl and swirl until all the ingredients are well mixed. If some chunks are not melted, use a double boiler.
- If the ganache is too thick, you can turn it liquid adding some water, one teaspoon at a time, until you get the necessary consistency.
For garnishing:
- Crushed the rest of the candy canes.
- Pour the ganache in the cool bundt cake.
- Spread the candy canes on top of the ganache.
- Enjoy!
